Omelet in a Mug

Updated: Apr 16, 2019

Living in a dorm can be challenging. How in the world do you eat healthy with only a microwave, a mini fridge, and maybe a blender? Easy recipes like this one make it possible! This omelet in a mug is ready in less than 5 minutes, packed with protein to keep you full, and will get you ready for your busy day and all you need is a mug and a microwave! I made my omelet with spinach and mushrooms, but you could use other veggies such as tomatoes or peppers to mix it up. Eat with some fruit and you're covering all of your food groups for a super healthy, delicious breakfast!

Why eggs? Eggs are a good source of protein, lutein and zeaxanthin which are carotenoids that help fight diseases and may reduce the likelyhood of night blindness in adults, and choline which helps with brain development and memory.
