This omelet in a mug is ready in less than 5 minutes, packed with protein to keep you full, and will get you ready for your busy day and all you need is a mug and a microwave! I made my omelet with spinach and mushrooms, but you could use other veggies such as tomatoes or peppers to mix it up. Eat with some fruit and you're covering all of your food groups for a super healthy, delicious breakfast!
Why eggs? Eggs are a good source of protein, lutein and zeaxanthin which are carotenoids that help fight diseases and may reduce the likelyhood of night blindness in adults, and choline which helps with brain development and memory.

Total Time: less than 5 minutes
Ingredients
1 egg
6 tbsp egg whites
about 6 spinach leaves
2 chopped mushrooms (or other vegetables of choice)
1/4 cup milk of choice
1/4 cup cheese
Salt and pepper to taste
Directions
Spray microwave safe mug with non-stick spray
Crack egg and whisk
Add egg whites, milk, cheese, and salt and pepper to taste
Wisk together
Add vegetables of choice and stir
Microwave on high for 1 minute
Remove and stir
Microwave again for 1 minute (or until fully cooked through)
Enjoy! (add salsa or hot sauce if you like!)
