Since we're talking about fats this week, what better quick and easy recipe to share than one of my favorite things to eat, guacamole! Growing up, I'll be honest, I hated avocados, but fast-forward several years later and they have become a staple in my refrigerator. Making this guacamole is quick and easy, will keep for a few days in the refrigerator, and can be used just as a dip or as an add on to a salad, toast, tacos, sandwiches, whatever you like!
Why Avocados? Avocados are high in unsaturated fat and dietary fiber, a source of potassium and folate, Vitamin C and K, and are very low in sugar.
The Recipe
Serves: 5-6 (1/4 cup servings)
Prep/chopping time: 5 minutes
Mixing time: 1 minute
Total time: about 5-6 minutes
The Ingredients
3 Avocados
1/4 cup diced red onion
1/4 cup diced tomatoes
1 Jalapeno, diced (optional)
1/2 teaspoon salt
lime juice from half to a whole lime (I used the whole lime!)
Directions
Cut the avocados in half and remove the pits
Using a spoon, scoop the insides of the avocado halves and add to a bowl
Dice the red onion and tomatoes and add to the bowl
Dice the jalapeño (if desired) and add to the bowl
Mash the mixture with a fork and fold the ingredients together (I like my guacamole chunky but you can make the consistency however you want!)
Add the lime juice and salt and fold together
Serve immediately or store in an air tight container with the pits of the avocados and a little more lime juice for freshness
